Danny’s Daiquiri
DANNY’S DAIQUIRI
- 2 oz. / 60 ml. blended white rum 
- ¾ oz. / 22.5 ml. fresh lime juice 
- ½ oz. / 15 ml. simple syrup 
- 3 dashes tiki bitters 
- pineapple-absinthe air 
METHOD
add all ingredients to shaker tin / shake with ice until chilled / strain into coupe or Nick and Nora / top with pineapple-absinthe air
PINEAPPLE-ABSINTHE AIR
5 oz. / 150 ml. pineapple juice 
5 dashes absinthe 
2 grams Lecithin powder 
add all to container (fine strain powder to prevent clumping) / briefly mix with milk frother / continue aerating either an aquarium pump for quick airs

A daiquiri might be my deathbed cocktail, and this one might just carry me there. I kept the classic build but added tiki bitters for depth. I love absinthe in daiquiris, so I made my first cocktail air—pineapple-absinthe for an ethereal lift. Light, herbal, and floating between here and beyond. Cheers y’all!
