DIRTY OLD MAN

  • ¾ oz. / 22.5 ml. mezcal

  • ¾ oz. / 22.5 ml. tequila blanco

  • ¾ oz. / 22.5 ml. Aperol

  • ¾ oz. / 22.5 ml. pineapple juice

  • ¾ oz. / 22.5 ml. fresh lime juice

  • ¼ oz. / 7.5 ml. agave syrup

  • 2 dashes Peychaud’s bitters

  • 6 drops habanero shrub (see note below)

  • pinch of salt

METHOD
add all ingredients to shaker tin / add ice and shake until chilled / strain into a chilled glass over fresh ice / garnish with lime wheel (Barely Disfigured uses a dehydrated one)

ABOUT
This cocktail was created at Barely Disfigured (@barelydisfigured; Brooklyn, NYC). In their version, they infuse Aperol with red chiles, though I opted for a habanero shrub. I love splitting my agave spirits, so when I saw the tequila/mezcal base here, I was stoked. The Aperol brightens it and the little bit of heat goes so nicely with the pineapple and lime.
