Clarified Batanga

CLARIFIED BATANGA

  • 6 oz. / 180 ml. tequila blanco

  • 12 oz. / 355 ml. Mexican Coca Cola

  • 1 oz. / 30 ml. fresh lime juice

  • 6 drops saline solution

  • 4 oz. / 120 ml. whole milk, to clarify

Serves three

METHOD
combine all ingredients except milk / stir and pour over milk / let sit for a 1-2 hours (or overnight) until milk curdles / slowly pour mixture into funnel with coffee filter or paper towel / first drops will be cloudy, so swap out container when drops are clear / pass through cloudy portion until all is clear / store in sealed bottle / to serve, carbonate using SodaStream or equivalent / pour over clear ice

If you’ve opened up Cocktail Instagram over the last week, you’ve likely seen this refreshing Mexican cocktail: Batanga aka Charro Negro. This simple and delicious concoction is Mexico’s take on the Cuba Libre (rum and coke). It was created in 1961 by Don Javier Delgado Corona in Tequila, MX. I decided to complicate things by making, clarifying, then recarbonating it…and oh my, it is DELICIOUS. It is dangerously easy to drink and the deep Coke flavors are there but subtle.
