Tequila Eastside
TEQUILA EASTSIDE
1½ oz. / 45 ml. tequila blanco
1 oz. / 30 ml. fresh lime juice
¾ oz. / 22.5 ml. simple syrup
6–10 mint leaves
2–3 cucumber slices
METHOD
add all but tequila to shaker tin and lightly muddle / add tequila to tin and shake with ice until chilled / fine strain into a glass over a BFC or other large format ice / garnish with cucumber slice

This one comes from Regarding Cocktails by Sasha Petraske. The Tequila Eastside was created by Christy Pope (@christpope) at Milk & Honey, inspired by Chad Solomon’s Eastside Fizz from his time at Libation. It’s a simple swap (gin for tequila) but with a more restrained spec. Sasha suggested bringing the tequila down to 1½ oz to keep the agave spirit in check. Crisp and cooling with lime, cucumber, and mint, it’s the kind of drink that earns its spot fast. Cheers y’all!
