GÉNÉRIQUE
1½ oz. / 45 ml. strawberry-infused Cognac
½ oz. / 15 ml. white vermouth (blanc)
½ oz. / 15 ml. Amaro Nonino
1 barspoon Islay Scotch
lemon peel oil
METHOD
add all ingredients to mixing glass / stir with ice until chilled / strain into a coupe or Nick and Nora / express lemon peel oil over the surface / garnish with strawberry slice
STRAWBERRY-INFUSED COGNAC
400 ml. cognac + 34 grams freeze dried strawberries
rapid infusion with iSi whipper or soak overnight at room temperature / strain through coffee filter until clear / bottle
ABOUT
This is an original of mine. A former student asked me to make a cocktail inspired by the song Générique by Miles Davis. Moody. Elegant. A little smoky. Subtle strawberry note for summer. Cognac felt right for Miles. A bit of amaro for depth, a touch of Islay Scotch for smoke. This sipper was made to be enjoyed on a nice summer evening. Cheers y’all!
