Kind Of A Frozen Carajillo
KIND OF A FROZEN CARAJILLO
2 oz. / 60 ml. tequila reposado
¾ oz. / 22.5 ml. Licor 43
¾ oz. / 22.5 ml. coffee liqueur
1 oz. / 30 ml. espresso
pinch of salt
¼ tsp. xanthan gum
1 cup crushed ice, to blend
METHOD
add all ingredients to a blender / add ice and blend until even incorporated / pour into glass / garnish with three coffee beans
ABOUT
I wanted something blended with coffee…because it’s summer and that’s what I need. As the name suggests, it’s my take on a frozen Carajillo with some aged tequila. Xanthan gum gives it body and make sure the cocktail doesn’t separate after it sits for a while. Cheers y’all!
