1¾ oz. / 52.5 ml. old tom gin
1 oz. / 30 ml. fresh lemon juice
½ oz. / 15 ml. rich simple syrup
3 dashes celery bitters
6 basil leaves
1 egg white or other foamer
METHOD
add all ingredients including basil to shaker tin / shake without ice (“dry shake”) / add ice / shake until chilled / fine strain into coupe / garnish with fresh basil

This cocktail was created in 2011 by Erik Lorincz at The American Bar at The Savoy Hotel (London, England). This gin basil smash takes on an extra vegetal note with the addition of celery bitters. The foam and its texture helps cut through the acidity and balances it all. Cheers y’all!
