Last Summer

LAST SUMMER

  • 1½ oz. / 45 ml. Oaxacan rum

  • ¾ oz. / 22.5 ml. pineapple liqueur

  • ½ oz. / 15 ml. chile liqueur

  • 1 oz. / 30 ml. fresh lime juice

  • 1 barspoon mezcal to finish

  • Tajín rim

METHOD
add all ingredients except mezcal to shaker tin / shake with ice until chilled / strain into a Tajín rimmed coupe or Nick and Nora / layer a barspoon mezcal (or several mists) over the surface

ABOUT
This one is by Matthias Soberon (@servedbysoberon). It uses Mexican cane juice rum, which is similar in style to rhum agricole blanc with its grassy, earthy notes. Pineapple adds sweetness and pairs well with spice. A little mezcal over the top brings a nice amount of smoke on the nose. Cheers y’all!
