Pillow Mint

PILLOW MINT

  • 2 oz. / 60 ml. bourbon (high proof)

  • ½ oz. / 15 ml. crème de cacao

  • ¼ oz. / 7.5 ml. simple syrup

  • 5 mint leaves

  • soda water, to top

METHOD
add mint to glass and gently press against sides to release oils / add remaining ingredients and pack with crushed or pebble ice / stir until cup is frosted / top with soda water and more ice / garnish with mint bouquet

ABOUT
This Mint Julep riff comes from Barlow Gilmore (@theweekendmixologist). In this version, Gilmore made it lighter and more refreshing than the original. The soda water was a nice touch too, giving it an airy lift that plays well with the chocolate-mint combo. The name sums the flavors up perfectly. Cheers y’all!
